Passionfruit icing ingredients
- 1 ½ cups icing sugar
- 20g unsalted butter, melted
- 2 ½ tablespoons passionfruit pulp (about 2-3 passionfruit)
How to make passionfruit icing
- To make the passionfruit icing, place icing sugar and butter in a bowl. Stir in passionfruit pulp until smooth
- Spread icing over chilled slice while still in pan. Allow slice to chill for 30 minutes or until icing is set before slicing

Tips for passionfruit icing
If you don’t have fresh passionfruit, you can use the same amount of canned passionfruit which is available at most supermarkets. Canned passionfruit is usually a bit sweeter than fresh passionfruit, so test for sweetness. If you prefer your icing more tart, you can add a small squeeze of lemon to the passionfruit before making the icing.
If you want to make smooth icing without the seeds, simply strain the passionfruit pulp through a strainer and discard the seeds.
The icing will be runny at first, ice your vanilla slice or baked goods and allow it to set for about 30 minutes before slicing.
