Spiced Cake with Lemon Cream Cheese Frosting

Cake
  1. Pre-heat oven to 180°C/160°C (fan forced). Grease and line a 20cm round cake pan with baking paper
  2. Place cake mix, eggs, milk, margarine or butter and spices into a mixing bowl. Using an electric mixer beat on low for 30 seconds to combine
  3. Increase speed of mixer to medium and beat for 2 minutes. Pour into prepared pan
  4. Bake for 40-45 mins or until the cake springs back when touched lightly in the centre. Allow to cool for 5 mins before turning out of the tin
Icing
  1. Place all ingredients into a mixing bowl
  2. Using an electric mixer, beat on a low speed to combine all ingredients. Increase speed to medium and beat for 2 minutes until smooth
  3. Spread icing on top of cooled cake
