Potato Rosti Melt

Method:
- Place peeled and grated potato in a colander and squeeze out all moisture. Transfer to a large bowl and add butter. Season with salt and pepper
- Heat oil in a frying pan over medium heat, portion potato mix into handfuls before pacing in the pan. Turn each Rosti after 3-4 minutes ensuring they are golden brown on both sides
- Place Rosti's on a tray and top with Perfect Italiano Perfect Melt cheese. Place in an oven or under a grill until cheese has melted and it begins to brown. Remove and serve immediately
Tips & Hints:
- Serve alongside eggs, smashed avocado, chutney or fresh tomato.
