A refreshing alcohol-free cocktail made in the Breville Boss To Go blender, combining the best summer fruit with coconut water.

Pacific Island Punch Mocktail

Ingredients:

1 cup (250ml) pineapple juice, chilled

1/2 cup (125ml) coconut water, chilled

1/2 cup (105g) drained canned lychees

1/3 cup (55g) frozen diced mango

1/4 lime, peeled

5 mint leaves

To serve

Ice cubes

1 tablespoon passionfruit pulp (approx. 1 passionfruit)

Method:

For best results use your Breville Boss To Go blender
Place ingredients into tumbler and secure blades
Lock into motor base and blend for 60 seconds, or until evenly blended

To serve

Serve over ice, and stir in passionfruit
