For a delicious, light dinner idea try this beautifully creamy bacon and corn soup. A great warming winter recipe, this soup can be made as a quick and easy mid week dinner or as a starter at dinner parties.

Creamy Bacon and Corn Soup
Ingredients:
Method:
  1. Heat olive oil in a large saucepan, add Don Real Diced Bacon and spring onions and cook stirring occasionally on a medium-high heat for 3-4 minutes. Remove approximately one third of the mixture and set aside
  2. Add potatoes and vegetable stock to saucepan and bring to the boil, reduce heat to low and simmer for 15 minutes
  3. Stir in creamed corn and milk and heat, stirring until almost boiling. Ladle into serving dishes and top each with a spoonful of reserved chorizo mixture
Tips & Hints:
  • Pan-fried bread croutons can be added to the topping mixture for extra crunch.
