Ingredients:
Brownie base

Method:
Brownie base
  1. Preheat oven to 180°C (fan forced). Grease and line a 20cm x 30cm slice tin. In a large heatproof bowl, combine together Fairy Cooking Margarine and chocolate. Place bowl over a saucepan of lightly simmering water. Stir occasionally until melted. Remove from heat
  2. Place the sugars, eggs, flour and cocoa in a large bowl, add the Fairy mixture and mix to combine. Pour in the tin and bake for 30 minutes, the centre should still be moist. Set aside to cool for 15 minutes
Peppermint cream
  1. Melt Copha in a medium saucepan over low heat. Add the icing sugar and mix well to combine. Stir in the milk and peppermint, then carefully add drops of food colouring until desired colour. Pour over the brownie slice while still warm. Allow to set for 10-15 minutes
Tips & Hints:
  • You can leave out the food colouring if you prefer a white mint slice
Chocolate topping
  1. In a medium heatproof bowl, combine together the chocolate and Copha. Place bowl over a saucepan of lightly simmering water. Stir occasionally until melted. Remove from heat
  2. Pour the chocolate over the peppermint, tilt to cover and put in the fridge to set for 10-15 minutes. Slice into 15 squares

Just tried a piece after making this slice earlier in the day. Delicious and the brownie base is delightful. Most if the recipes I have for choc mint slices are either uncooked or very crisp base. The brownie base is a real change and really really nice. If you don’t want to buy 2 clocks of copha just cut back on 10g for the topping and add and extra 10 grams of chocolate. I also use peppermint essential oil, 4 drops for a much smoother mint flavour. This slice is not expensive when you consider how much you pay for a small slice of something similar at a bakery or cafe.

Shame I had to buy two blocks of copha for this. Don’t use it for many recipes so will end up throwing out the leftover amount. Lots of eggs too which makes it expensive. Tasted nice, but wouldn’t make it again due to cost/waste.
